When the cherries ripen, the harvest commences.

Three methods can be adopted:

Picking
Only fully ripened cherries are picked, manually. Over-ripe and unripe cherries are left on the shrub. This is therefore the best way to harvest coffee, but it is also the most expensive.






Stripping

For harvesting, a simple device is used that shakes the cherries from the branches onto the ground. The drawback is that ripe, unripe and over-ripe cherries are all harvested.








Machine harvesting

Tracked vehicles are driven past the rows. These vehicles shake the bushes and collect the cherries.
