:: BEAN EXTRACTION

There are two methods for extracting beans:

Dry - Natural Coffees
The cherries are scattered over a clean surface and allowed to dry in the sun. When dry, they are hulled and the bean is extracted. The bean is also freed from its parchment, or endocarp. The beans procured in this manner are termed "natural".



Wet - Coffee washing

The cherries are placed in water, after which they are processed by a “de-pulping” and hulling machine. The beans are then placed in fermenting tanks to remove the remaining pulp and parchment. This is followed by drying, either in the sun or artificially. The beans procured in this manner are termed "washed".
